Baingan Bharta is a vegetarian dish made with eggplants and Indian spices. The eggplants are usually grilled under a fire that will produce a kind a delicious burnt taste. If you don’t have a gas stove or a BBQ, you can instead cook the eggplants in the oven. This recipe is a bit different from the original one since I’ve added a bit of sweetness to it. If you don’t like the sweetness, you can always omit the coconut milk and palm sugar. In summary, if you like sweetness and spicy dishes, this might be for you. Preheat oven to 450°F. Rub oil on the outside of the egg plant using your fingers. Cut the eggplants into half and cook, flesh down, until the flesh is soft and the skin is blistering off, about 30 minutes. Scoop and Chopped the flesh out of the skin. Set aside.

in a skillet, heat the oil over medium-high heat. Add the cumin seeds, and let them cook into the oil until they turn golden brown. Be careful not to burn them.

Add the onion, ginger and garlic; cook and stir until onions becomes a bit brown.

Stir in the tomato and season with turmeric, ground cumin, ground coriander, cayenne pepper, palm sugar, salt and black pepper. Cook and stir for a few minutes. Place the chopped eggplant pieces in the skillet, and cook for 10 to 15 minutes so some of the moisture evaporates. Add the coconut milk a let simmer for another 15 minutes.

Taste, and adjust seasonings if desired. Garnish with fresh cilantro, and serve.
