Cajun Seasoning
Olive Oil
1/2 Red Pepper Diced
1/2 Green Pepper Diced
1/2 Yellow Pepper Diced
1/2 Red Onion Diced
10 oz Tomatoe Diced
1 cup Cheddar Cheese Shredded
12 Flour Tortillas

    Feeling Mexican tonight? Try those Cajun Chicken And Rice Fajitas. They are delicious and can be ready in only 30 minutes. Indeed, this is one of the reasons why I love this recipe. It’s quick and easy to do. For better results, I like grilling the chicken on a BBQ. It completely changes the taste. Also, I usually serve those fajitas with some homemade guacamole and some sour cream. I’ll try to post my personal guacamole recipe in the next couple of days.     Add chicken broth and the white rice to a large pot.

    Bring to a boil and lower the temperature to low. let the rice cook, covered, for about 8-10 minutes or until the rice is cooked. Set aside

    Season chicken thighs generously with Cajun seasoning.

    Heat olive oil in a large deep skillet over medium heat and add chicken in single layer and cook until done. Set aside.

    Add diced vegetables to the pan and add in little more olive oil if needed. Saute until vegetables are tender.

    Stir in cooked rice, tomatoes and cheese.

    Place filling into tortilla shells and roll.
