1/4 cup Butter softened
2 Cloves Garlic Chopped
1 tsp Fresh Rosemary
1 tsp Fresh Thyme
1 tsp Fresh Sage
1 Chicken About 4 lb
1 Tbls Breadcrumbs
Cider Sauce
1/2 cup Chicken stock
2 tsp Cornstarch
1 cup White Wine

    I love this herb-roasted chicken recipe. When I don’t feel like spending hours in the kitchen making a decent meal for the family, I often make this recipe. It takes 15-20 minutes of preparation, then you can forget the chicken it in the oven. It’s easy to do and I always get great results. The fresh herbs make all the difference in this dish.     Roast Chicken

    With the rack in the middle position, preheat the oven to 180°C (350°F).

    In a bowl, combine the butter, garlic and herbs.

    Spread the herb butter evenly beneath the skin. using your fingers, gently poring it under the skin of the chicken’s breast and legs. Do not tear the skin.

    Place the chicken on the rack of a roasting pan. Season the chicken with salt and pepper. Scatter with breadcrumbs and roast until a meat thermometer inserted into the leg without touching the bone reads 82°C (180°F),. Remove the chicken from the roasting pan.

    Cider Sauce

    In a saucepan, combine the chiecken stock and cornstarch.

    Remove the fat from the roasting pan using a spoon and deglaze with the wine. Pour the cooking juices into the saucepan. Bring to a boil while stirring. Adjust the seasoning.

    Carve the chicken. Serve with with the cider sauce. Voila!

    I just love this recipe. It’s so easy to do and it’s absolutely delicious. One of my favourite for sure! I make this recipe a least 2 times a year.
