4 Slices Bacon Chopped.
1/2 cup Crouton You can use some Parmesan croutons. Those are delicious in this recipe.

1/2 cup Olive Oil
4 Tbsp Lemon Juice
1 tsp Dijon Mustard
1/4 tsp Salt
1/4 tsp Black Pepper

    A delicious Kale And Radicchio Salad topped with bacon, eggs, and a classic vinaigrette. It has been a while since I’ve eaten a good salad like this one. Those ingredients are just very good together. This is another great recipe with a “super food” in it. If you want a boost of energy, this is a to go salad. Also, for the croutons, you can use any type of them, but I really suggest you use some homemade Parmesan croutons. It will make a big difference in this recipe.     Vinaigrette

    Whisk all ingredients together.

    Chopped your kale and radicchio. In a large bowl, mix your vinaigrette with your kale and radicchio. Refrigerate 20 minutes to soften the kale.

    While your salad refrigerate, poach your eggs.

    Separate the salad in 2 bowls and top your salad with the croutons, eggs and some bacon. Voila!
