1/4 cup Coconut Flakes
3 Banana Riped
1 Mango DIced into samll pieces
1/2 cup Walnuts
4 Tbsp Vegetable Oil
1/2 cup Brown Sugar
1/2 cup Yoghurt Natural yoghurt or vanilla
1 tsp Salt
1 Large eggs
1 tsp Vanilla
1 cup All-Purpose Flour
1 tsp Baking Powder
1 tsp Bicarbonate

Preheat the oven to 350°

Mash bananas in a large mixing bowl. Add oil, yoghurt, sugar and salt. Stirr well.

Add egg and vanilla and beat again. Sift in flour, bicarb and baking powder. Stirr well.

Mix in walnuts, cranberries, coconut flakes and mangos. Stirr well.

Spoon into greased loaf tin and bake for 50 to 60 minutes.
