I’ve first discovered Ratatouille in a sandwich in a restaurant near my workplace. It was served in a panini bread garnished with goat cheese. It was delicious. In fact, it was so delicious that I went back up there the day after, just to try their bowl of Ratatouille. I never thought I would love something with only vegetables in it. It was warm, savoury and perfect for a cold winter day. After that, I tried to make some at home and today I present you my recipe. It’s so easy to do so, go ahead and do it. Preheat the oven to 375F. Lightly oil a quart baking dish and set aside.

Using a mandoline slicer, thinly slice all your vegetables. Set aside. ​

Evenly spread marinara sauce over the bottom of the baking dish. Top with minced garlic, red pepper flakes, 2 sprigs of fresh thyme, salt and pepper.

Stack vegetables in a pattern and lay them in the baking dish.

Sprinkle with olive oil and scatter remaining thyme, salt and ground pepper over the top.

Cover with tin foil and bake for an hour until vegetables are tender and the marinara sauce is bubbling up from underneath.

Remove from oven and let cool 10 minutes before serving.
