Salmon tartare is always prepared with fresh raw salmon and seasonings. Eaten mainly as an appetizer, it is commonly spread on a cracker or bread. I started to eat tartare at a very young age. In all honesty, I always had a fascination of eating raw meat or fish. Indeed, all those dishes that I have eaten over the years was always extremely good and flavorful. It is kinda scary to to try to make this at home for the first time. Indeed, we are never sure how to manipulate the meat or know what part to use to make a good tartare without killing ourselves. Fill a bowl two-thirds full with ice cubes. Place a second bowl on top. This allows the fish to remain cold during preparation.

Cut the salmon into small pea-size dice with a knife and place in the chilled bowl as you go. Set aside in the refrigerator.

In a small bowl, combine the shallots, vinegar and water. Let marinate a couple of minutes. Drain the shallots and discard the liquid.

Add the shallots and the remaining ingredients to the diced salmon. Season with salt and pepper and mix thoroughly.

Serve immediately with a green salad, toasted bread or homemade potato chips.
