1 tsp Orange Zest
4 cups Rhubarb Diced
1 Tbsp Cornstarch
1/2 tsp Vanilla
Cheesecake Crust
1/4 cup Butter Melted
1/4 cup Sugar
1 1/4 cups Graham Cracker Blended
Cheesecake Layer
8 oz Cream Cheese About 1 package
2 Large egg
1 tsp Vanilla
4 Tbsp Sugar
White Chocolate Layer
6 oz White Chocolate Chopped
1/4 cup Heavy Cream

Cheesecakes are one of my favourite dessert. I usually like the classic New York Cheesecake with a simple strawberry coulis. However, this White Chocolate Rhubarb Cheesecake is just divine. After eating this one, you won’t ever go back to the classic recipe. Indeed, in this recipe we get the perfect combination of cheesecake filling and rhubarb filling. It’s just damn perfect. Also, if you want to make a nice presentation, keep some rhubarb aside to garnish the pie once it is cold. Let me know in the comments below how you liked this recipe.

Preheat oven to 350°F.

Rhubarb Filling

Mix the cornstarch and sugar in a saucepan. Add the rhubarb, orange juice and orange zest and toss gently until everything is evenly combined and there are no dry pockets of the sugar mixture. Stir constantly over medium heat until the sugar dissolves and forms a syrup. Continue cooking and stirring until it reaches boiling and becomes quite thick. Set the pan aside and let it cool.

Cheesecake Crust

Mix together all of the ingredients for the crumb crust. Press evenly across the bottom and up the sides of a standard pie plate. Set the pie plate or tart pan on a rimmed baking sheet and bake for 8 minutes.

Cheesecake Layer

Add the cream cheese, eggs, vanilla, and 4 tablespoons of sugar to the bowl of a food processor while the crumb crust bakes. Process until smooth, scraping down the sides as needed.

White Chocolate Rhubarb Cheesecake

Spread the rhubarb filling over the bottom of the cheesecake crust. Pour the cheesecake filling over the rhubarb filling and transfer the pan to the oven. Bake for 25 minutes, or until the cheesecake layer appears to be set in the centre. Take the pie from the oven and gently spread the white chocolate layer filling evenly over the top. Let cool for 30 minutes on a cooling rack, then transfer to the refrigerator and chill for at least 5 hours.

White Chocolate Layer

While the Cheesecake is in the oven, place finely chopped chocolate in small bowl.
Over warm water on low heat, stir constantly until the white chocolate is almost melted.
Remove from heat and hot water and stir until smooth and until there are no more lumps.
In small saucepan over low heat, heat cream just to a simmer, stirring frequently. Remove from heat.
Add the hot cream to melted white chocolate.
Gently stir to incorporate, then beat or whisk until smooth, scraping bowl as necessary with rubber spatula.
