Those fluffy Cupcakes Drizzle Cake Style are simply delicious. My mom used to make this cake and it was always so good. I’ve decided to take her recipe and make cupcakes out of it. It’s so simple and easy to do. I just love the poppy seeds and lemon mix. It’s so good. Garnish them with almonds, a bit of lemon zests and a piece of lemon. For the frosting I usually make a lemon flavoured one, but I’m almost sure that any kind will be good for those cupcakes. Oh and eat them while they still are a bit warm. 🙂

Preheat oven to 325°

In a medium mixing bowl, combine flour, baking powder, salt, and poppy seeds.

In a separate large bowl, beat butter, granulated sugar, and lemon zest until light and fluffy

Add the eggs one at a time, beating well after each addition.

Add half the flour mixture and beat on low speed just until blended.

Add milk and lemon juice and mix on low speed until combined.

Divide batter evenly among the muffin cups, filling 3/4 full. Bake until golden brown, 20-25 minutes.
