A vegetables and chickpeas stew with North African flavors. This is a great recipe if you feel like eating something exotic. The spices in there are simply delicious. Indeed, this dish is seasoned with a delicious blend of black peppercorns, turmeric powder, chili powder and cumin seeds. We also added some freekeh, a “supergrain”, and some kale, a “superfood”, all great ingredients. It’s a perfect bowl for any vegetarian out there. Also, If you want a gluten free bowl, you have the possibility to omit the macaroni or simply exchange them for some gluten free pasta.

Preheat the oven to 400°F

Drain and rinse the chickpeas.

In a large pot, heat a drizzle of olive oil, over medium heat, until hot.

Add the onion, carrot, and celery to the hot pot. Cook while stirring for about 7-8 minutes, or until softened. Season with salt.

Add the garlic and 2/3 of the Tunisian spice blend to the pot and cook for 1-2 more minutes, until fragrant.

Add the tomato sauce to the pot and cook for another 1-2 minutes. Adjust seasoning.

Stir in the Vegetable Broth, the freekeh, the Kale and the macaroni. Bring to a boil on high, then reduce to a simmer on medium-low. Cook for 25-30 minutes, until the freekeh and macaroni is tender. Adjust seasoning.

While the stew simmers, dry chickpeas the with paper towels.

Scatter the chickpeas on a baking sheet with the remaining Tunisian spice blend and a generous drizzle of olive oil.

Place in the oven for 15-20 minutes, until golden brown. Season with salt to taste.

Once the stew and chickpeas are ready, divide the stew between your bowls.
